Baked Pumpkin Damper
2½ cups SR flour
3 tbspns butter
1 cup grated tasty Coon cheese
1 tbspns curry powder
2/3 cup chopped spring onion
400g cooked mashed pumpkin
1 egg, lightly beaten
Rub 2 tbspns butter into flour, add cheese & mix lightly. Heat remaining butter in small pan, add curry powder & spring onions; cook 4-5mins, add to flour mixture. Combine pumpkin & egg, stir into flour mixture. Turn dough onto lightly floured surface & knead lightly until smooth. Press out to approx 3cm thickness & place on a lightly floured baking tray. Bake in pre-heated hot oven (200C) for 35-40mins or until golden brown. This is delicious served with chives & parsley butter.
Note: Qld blue or Jap best for this recipe.

good recipe muzz,

cooked it up yesterday, went down well. i reckon the curry powder gave it a nice tang.
