Corn Flat Bread
170g fine corn flour (or very fine-ground cornmeal)
340ml buttermilk or sour cream
275g plain white flour
1 tspn salt
1 tspn bicarbonate of soda
Preheat oven to 230°C. Place baking tin in camp oven to heat. Sieve all the dry ingredients into a large mixing bowl, combining them. Make a well in the centre & pour in most of the milk. Work around the bowl, drawing the flour into the milk, until absorbed. When the dough comes together it should feel soft but pliable, add more milk if needed. Turn onto a floured board, knead lightly. Using the palm your hand, shape the dough out into a round about 4cm thick. Cut a cross into the surface of the dough. Transfer to the hot baking tin & bake for
35-40mins in the oven. Test with a skewer. When tapped on the bottom the loaf should sound hollow. Serve hot or cold with chutney & cold ham. (There is no baking powder in this recipe therefore the dough only rises slightly). Cooked in a 12" Billmans.

I bought some "Cornflour" in Coles - it is 100% maize cornflour.
Most other brands of "Cornflour" are made from wheat.

Thanks for this Muzz, will have a crack at it.

Sundryed, I can taste it with  ham and sun-dried tomato already. That would be nice with per Christmas nibbles and drinks Smiley

I reckon would be fantastic as pieces ripped off and dipped in a mix of good virgin olive oil and balsamic vinegar  Smiley

Would be fabulous with a soft cheese and Michaelbs onion marmalade.  I am just so addicted to it.  Made a double batch and am working my way through it already.

There are a lot of really good side dishes in the Pickles, Relishes part of the forum.  The following two are particular favourites of mine and also CDs Green Mango Chutney.

Onion Marmalade - Michaelb


8 Brown onions - sliced
1 x Tablespoon Cumin seeds- whole
1 x Tablespoon Coriander Seeds-whole
3 Cups white wine vinegar
2.5 cups brown sugar

Add onions, seeds, vinegar - Boil for 15 minutes

Add sugar - Boil/simmer 1 hr

Bottle normally in sterile jars.

Sweet Pickles- Sundryd


You will need:
2 Large carrots
1 large green cucumber
1 red pepper
1 green pepper
4 sticks celery
Piece ginger
8 shallots
6 small white onions ( about the size of a bonker)
10 snow peas
10 green beans

Pickling Liquid:
2 1/4 cups sugar
2 1/4 cups white vinegar
1 teas salt
1 1/4 cups water
Bring to boil and stir to mix context, remove from heat and cool.
Note: Pickling liquid must be measured correct.
Prep:
Cut carrots in to straws
Cut cucumber length ways and de'seed then cut at and angle.
Cut peppers and de'seed and cut into thin strips
Cut celery length ways and dice into 1 cm PCs
Slice ginger into thin PCs (about  six PCs)
Dice shallots into 3 or 4 Cm's
Peel onions
Top and tail snow peas
Top and tail beens cut into 3 or 4 Cm's

Bring a large saucepan of water to the boil, add vegetables and remove from heat, let stand for TWO and half minutes. Drain and place vegetable on clean tea towel (spread out) until completely cool and dry. Place all pickles in large jar, pack in tightly, pour over pickling liquid two cover. Refrigerate for about a week before using.
will keep in fridge for a few months.
This is a family favorite and easy to make.
