There are a lot of really good side dishes in the Pickles, Relishes part of the
. The following two are particular favourites of mine and also CDs Green Mango Chutney.
Folks would like to share this with you all, good on cold meat (seriously good)
Onion Marmalade - Michaelb
8 Brown onions - sliced
1 x Tablespoon Cumin seeds- whole
1 x Tablespoon Coriander Seeds-whole
3 Cups white wine vinegar
2.5 cups brown sugar
Add onions, seeds, vinegar - Boil for 15 minutes
Add sugar - Boil/simmer 1 hr
Bottle normally in sterile jars.

Sweet Pickles- Sundryd
You will need:
2 Large carrots
1 large green cucumber
1 red pepper
1 green pepper
4 sticks celery
Piece ginger
8 shallots
6 small white onions ( about the size of a bonker)
10 snow peas
10 green beans
Pickling Liquid:
2 1/4 cups sugar
2 1/4 cups white vinegar
1 teas salt
1 1/4 cups water
Bring to boil and stir to mix context, remove from heat and cool.
Note: Pickling liquid must be measured correct.
Prep:
Cut carrots in to straws
Cut cucumber length ways and de'seed then cut at and angle.
Cut peppers and de'seed and cut into thin strips
Cut celery length ways and dice into 1 cm PCs
Slice ginger into thin PCs (about six PCs)
Dice shallots into 3 or 4 Cm's
Peel onions
Top and tail snow peas
Top and tail beens cut into 3 or 4 Cm's
Bring a large saucepan of water to the boil, add vegetables and remove from heat, let stand for TWO and half minutes. Drain and place vegetable on clean tea towel (spread out) until completely cool and dry. Place all pickles in large jar, pack in tightly, pour over pickling liquid two cover. Refrigerate for about a week before using.
will keep in fridge for a few months.
This is a family favorite and easy to make.
