Another easy recipe for camping or at home. Good for Camping as most ingredients are tinned, bottled or dried...red/green curry paste can be bought in small plastic tubs..."Mae Ploy" brand is one of the tastier and better brands we have found.

INGREDIENTS
750 Grams whole fish or fillets
2 table spoons peanut oil
2 table spoons green curry paste
2 cups coconut milk
1/4 cup fish sauce
3 table spoons sugar,,,,,brown or palm sugar is best if available
5 kaffire lime leaves

METHOD
Add oil and curry paste to a small camp oven
Fry curry paste one min.
Add other ingredients except fish,
Stir well
Add whole fish , cover and cook for 20 mins turning fish once.
Serve on a bed of rice.
NOTE
The original recipe for this was for green curry paste......its pretty hot stuff.....if you prefer milder use red curry paste or less green.
If using whole fish make 3 or four slashes in the fish each side before cooking.
If using small fillets of fish the cooking time will be less.

Just remember to finely slice/chop the Kaffire leaves.
