G'day all thought I'd do a curry tonight.

4 chicken fillets
4 slices rindless bacon
2 carrots
same amount of sweet potatoe
6 mushrooms
cashews
2 cans coconut cream
1 cup chicken stock
1 TBS fish sauce
2 TBS honey
2 TSP green curry paste more if you like it hotter
olives optional

Bit of oil in your co pop in curry paste until fragrant in goes the chicken for a few minutes then the bacon and ad the rest.Cook for 1 and half hrs thicken with a bit of corn flour if necessary.
I forgot to put the cashews in
Serve with basmati rice  Smiley

Looks good Pete, bet it tasted good, we havnt done many Thia Curry's might need to shift the thinking away from Indian Curry's. Wink
