Copy-Cat Old Bay Seasoning

Ingredients:
• 1 Tbsp. Celery Seed
• 1 Tbsp. Whole Black Peppercorns
• 6 Bay Leaves
• 1/2 tsp. Whole Cardamom
• 1/2 tsp. Mustard Seed
• 4 Whole Cloves
• 1 tsp. Sweet Hungarian Paprika
• 1/4 tsp. Mace

Preparation:

In a spice grinder or small food processor, combine all of the ingredients. Grind well and store in a small glass jar. Mix 50:50 with coarse salt when seasoning crabs.



or you could try this variation

Quote:
1 tablespoon ground bay leaves
2 1/2 teaspoons celery salt
1 1/2 teaspoons dry mustard
1 1/2 teaspoons black pepper
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon paprika
1/2 teaspoon red pepper
1/4 teaspoon ground mace
1/4 teaspoon ground cardamom
Combine all ingredients, then store in an airtight container.

Many thanks Joan, I went exploring and found that there is an excellent on line spice shop and even better a store in Sydney that sells lots and lots of spice mixes that I couldnt find in my local super markets.
