G'day All

Been busy as buggery lately gearing up to cater for my mates Wedding. (100 head)

They're holding the whole show on their property at The Caves (Backyard Style).

My main role is to take care of the main meal & maintain the various fire drums.

This is the the plan:

1 x Large Amount Pumpkin Soup (Just to warm up after the mingling stage)

3 x 7.6kg Legs of Pork -----------------------------Wood Fired Spit
6 x 3kg Legs of Lamb ------------------------------Camp Ovens
1 x 10kg Full Gold Rump Roast (Halved) ---------Camp Ovens
6 x 2kg Organic, Marinated & Stuffed Chooks ---Camp Ovens

Bulk Roast Spuds
Bulk Roast Pumpkin (Butternut & Jap)
Bulk Roast Onion
(The Vegies will cook in a gas Spit/Oven normally used for whole pigs)

Bulk Fresh Corn Cobbs
Bulk Apple Sauce
Bulk Gravy

14 Dozen Dinner Knots (Bakery)

The Oven plan
2 x 20" Camp Chef
3 x 18" Billmans
1 x 16" Camp Chef
3 x 15" Billmans
1 x 15" Furphy
1 x 10" Metters (Not sure what good that will be)

There are more entrees other people are taking care of as well.

The Meat

Crikey, i'd need a couple of labourers just to help cart the half tonne of camp ovens.......hehe........ good stuff mate, that is gunna be a feed to remember... looking forward to seeing the photo's of this set up in action.

Here's the results.

Had a great time cooking all of the tucker for a great couple on their great day. It was a real test and I think I pulled it off quite well. By far my biggest "Job".

8.00am start - 7.00pm served and knocked off. Cut a few green cans and headed home. Spent most of today back there cleaning all the ovens up. Would do it all again tomorrow.

When the word "Wedding" comes into the scene it turns into a totally new ball game, as far as presentation, time lines to meet etc.

Got pretty busy at times, so missed a lot of photos. Here's the ones I did get.
