thinking about getting a rabbit or hare as  i have located a few rabbit holes in the thick grass and i havent yet cooked a rabiit or hare. i can do head shots and have gutted and cleaned them up before so that is no problem. if any one has any recepies could you please post it up and like i did with the chicken ill post pictures up

Old Nova Scotia Acadian style. 

Put whole rabbit in pot.  As stuffing use:  an apple, an orange, and an onion. 

Because rabbit is lean quite a few say cover meat with slices of bacon.

To me the onion is the most important of all of those ideas.

When I have roasted bunnies in the camp-oven, I prick the meat in many places with a long skinny knife or skewer. soak in a brine for an hour or so.

And the fun of campoven cooking for me is lifting the lid and basting the meat often.

I roast in olive oil with whatever herbs and spices I have. I always use Vegeta gourmet stock powder.

I have also coated bunny pieces in seasoned flour and shallow fried in the campoven.

but this is the way my grand mother and my father make it and it is the best god dam meal around.

Please ensure you have crusty bread to go with it. My mum does it in a pressure cooker and adds the peas just at the end. Soooooo Soooooo good

ohhh yeah

when I was over in Malta last year my aunty gave me the head. They throw nothing away.

We dont tend to use the head here

You can buy them in Coles Griffith NSW 2680.
Outback Cooking In The Camp Oven book has some good recipes.
