is one enough for your catering ???

what about a lower trap door to make it easy to renew your coals ?

or is one load enough ?

maybe also use as a smoker down the track.

One is enough for now. the trays (3) are 860x400 ish so plenty of room. I will still use many camp ovens on these big gigs. The plan is to just cook all the potatoes in this oven and use campovens for the rest of the veggies.

There is no coals in the oven. Its used just like a camp oven over a hot bed of coals. I imagine the food would get way to smokey if I was to use coals inside roasting spuds for 2 hours.

and yep have thought about using it as a smoker too.
