Quick and easy Banana Cake [not a loaf] (Read 10674 times)

I was too slow and the teens got to the cake before the camera and I did but the recipe is still worth passing on. Perfect for a morning tea, lovely small moist cake

Ingredients
125g butter/marg
3/4c sugar
1tsp vanilla essence
2 or 3 bananas, mashed
1 egg, lightly beaten
1/4c milk
1 1/2c SR Flour

Over low heat, using a metal mixing bowl gently melt
Butter/Marg, Sugar & vanilla essence 

Melting is easier than creaming and works great.  Don't heat the butter up past melting point, remove from heat as soon as possible.

Add bananas & egg to the bowl and stir well

Lightly mix in milk and flour

Pour batter into greased tin and bake for approx 40 minutes at 180°C

Test with a skewer.
Cool in the tin for about 5 minutes before turning out onto a cake rack.

I used a round tin that measures 18cm across - not sure what it is in inches, lousy at conversions   Huh

Great as an after dinner dessert with warm custard    Smiley
Will pop up a photo next time the bananas have browned up a bit
