I'm thinking - throw in some italian style mixed herbes and maybe a bit of mozzarella with the bacon and onion before it gets rolled up and you'd have a pizza roll! Slice it about half in thick, arrange around the edge of a platter with a nice tossed green salad in the middle drizzled with some olive oil. Beach picnic, here we come!
