QUICK SYRUP SPONGE PUD

4oz SR FLOUR
4oz SUGAR
4oz BUTTER
2 EGGS
3 tbsp GOLDEN SYRUP

GREASE 21/2 PINT MICROWAVE SAFE BOWL

PUT 2 tbsp SYRUP IN BOTTOM OF THE BOWL.

PUT SUGAR, MARG/BUTTER INTO A MIXING BOWL AND CREAM TOGETHER.

ADD 1 EGG AND MIX WELL.

ADD 1/2 THE FLOUR AND MIX WELL.

ADD 2nd EGG AND MIX WELL, ADD REST OF FLOUR AND 1 tbsp GOLDEN SYRUP AND MIX WELL.

PLACE MIXTURE IN GREASED BOWL AND COVER WITH CLINGFILM.

PIERCE CLINGFILM AND PUT IN MICROWAVE ON HIGH POWER FOR 4-5 MINUTES.

ALLOW TO STAND FOR 5 MINUTES TO CONTINUE COOKING.

TURN OUT OR SCOOP OUT AND SERVE.

COULD BE COOKED IN A DO OR GAS OVEN, BUT I'VE NOT TRIED EITHER

It should serve between 4-6 TBF, depending on the size of the portion you serve, it normally serves about 4 with my big portions, lol.
