Mini  Pineapple Upside -Down Cake

Cake Mixture

60g butter
1/3 cup caster sugar
1 large egg
3 tablespoons milk
1 cup self-raising flour
1 teaspoon cinnamon
1teaspoon ginger

Caramel;
1/3 cups brown sugar
3 tablespoons butter

Fruit
1 small can sliced pineapple

Method

Cream the caramel mixture together and spread on the base of  patty tin.
Arrange drained pineapple on top of caramel. Decorate with cherries.
Beat butter and sugar to a cream,  then add the egg and beat well.
Add sifted flour and spices alternately with milk while mixing.
Pour over caramel and fruit and spread evenly.
Bake in camp oven 30 -40 minutes or until cook.
Turn out of tin and place upside cake on a plate.

Not bad with custard either Aart.
