lamb roast gets thai- d up.! (Read 6162 times)

I love a roast Lamb, and i also like a bit of spice. So heres a bit of a heat / curry twist on ya lamb roast that wont disappoint you.

600g lamb rump

in the oven what ever veg you like with your roast, i do baby spuds, butternut pumpkin , shallot onions, garlic clutches and radish.

tonite was in a 4.5 qrt oven in the hot wheel cooker 10 heatbeads top and bottom..
veg in whilst pre heating.

coat the rump with ground white pepper and oyster sauce.
onto a hot BBQ plate to sear and blacken..then into camp oven for around and hour per 1.5 kg...this one was prob a bit over cooked in about 50 mins, so mabe check at 40 mins and rest.

masamann sauce.
1 can coconut cream
2 tablespoon masamann curry paste
1 tblspoon palm sugar
i chopped fine red chilli.

heat 1/2 cup coconut cream in pan 5 mins
add masamann paste, stir for 5 mins
add rest of cream, sugar,chilli.5 more mins. turn off
until ready to serve , mabe heat back up a bit.

throw on some crushed pistachios and coriander to garnish.
