Cooked a fruit cake last night based on the old Parmalat recipe.

Cooked in the home oven as I was using camp ovens for something else.

Took 1 kilo bag of dried mixed fruit and added a 200 gram pack of dried figs chopped up.

Soaked the fruit mix in 200 ml of port then added two shots of espresso and enough milk to make 400 ml so 600 ml total liquid. Let all of that soak for a day and a half while stirring every few hours.

To the fruit mix added 2 cups self raising flour (I used a wholemeal flour), one cup dark brown sugar and two teaspoons nutmeg and stirred to mix.

Spooned into a lined cake tin and baked for three hours at 160 degrees.
