Chicken Breasts and Stuffing (Read 7381 times)

Last night I made Chicken Breasts and Stuffing along with a Damper to sop up all the good stuff. Everyone loved it. Said it was my best, yet. Git it a go see what you think.

I adapted this recipe from the recipe at this link

3 thick Chicken Breasts
1 sliced onions
5 cups - bread stuffing (the way you like it)
2 cups - chicken broth
2 cups - sliced mushrooms
4 tbs - olive oil
2 tbs - seasoning salt
2 tbs - butter
1 Can of Cream of Chicken Soup
Melt butter in dutch oven and sear chicken breasts on both sides then remove. Add onions. Return chicken breasts on top of onions. Add olive oil. Sprinkle with seasoning salt. Add coals (approx. 12) to lid of dutch oven. Add chicken broth. Cook chicken breasts until done. Remove chicken breasts once again. Add sliced mushrooms and cream of mushroom soup. Add more chicken broth if needed to maintain gravy thickness. Return chicken breasts to CO. Continue to cook until mushrooms are tender. Add stuffing. Transfer most of the bottom coals to the top of the DO. Bake stuffing until done. Serve and enjoy!!!

Is that the bread stuffing on top? Looks like crutons.

That is bread stuffing. I cheated and brought the boxed stuff and made it up. Bloody good. the wife uses it when we do a Turkey also..

My wife tells me that it is not Boxed stuffing I used but seasoned bread cubes, apparently there is a big difference. I am sorry if I steered anyone down the wrong track.
