I've been mulling over this one for a while and finally got around to making up a few.  Delicious.  Some may baulk at the lard, but it makes the recipe IMHO  Grin

I think the greatest con of recent times is the emergence of olive/vegetable/saffron/rice/peanut oil and nothing tastes as good as something roasted in good old dripping/lard. 

That's a big rant by someone who has had seven coronary by-passes and should know better isn't it?  hi hi Wink Wink

CORNISH POTATO CAKES


Ingredients

225 grams boiled hot potatoes
15 grams butter or margarine
50 grams plain flour
Melted lard

Method

Mash potatoes, add butter, salt and pepper to your taste, and beat well. Gradually adding flour, mix to a stiff dough, roll out on a floured board and use a scone cutter to stamp out rounds.

Grease heated griddle or heavy base fry pan with lard and cook 3 minutes on each side.

Serve hot, spread with butter.
