Have enjoyed cold sliced meatloaf for my work lunch, and recommend it for anyone to try.

I have only made two meatloaf's and I am after the ultimate meatloaf and wish to pinch others ideas.

This meatloaf Had the following ingredients.

Beef and pork mince, garlic, tin of tomatoes, stock powder, pepper, an egg, crumbled slices of bread soaked in milk, sautéed onions, chopped parsley and basted with a spiced sauce.

So easy to make and bake, a good meatloaf is a Campoven winner  Smiley Smiley

meatloaf I find can be good or  dry as a old boot,
a shearers cook told me you need a  fatty type mince, getting the balance right is the thing.

Thanks Muzz.

I used lean beef mince and pork mince with my two attempts and they both turned out moist.

I soaked the bread crumbs in milk, so that probably helped.

Enjoyed it last night for dinner and ate the last slice for lunch today.

It is something I will be experimenting with regularly now as it is very tasty.

The SIL tells me that she makes a salmon loaf, and that sounds bloody yum  Smiley

I'm thinking of adding olives, boiled eggs, capsicum, mushrooms to my next loaf. Getting hungry thinking about it  Grin

Your not wrong there Jeff. I was hanging out for another slice today but unfortunately none left  Cry

Any one out there have a secret ingredient they could share?

The best that I have eaten came from a smallgoods butcher. Maybe it may have been smoked?

Enjoying my lunches again this week.

Added boiled eggs, stuffed olives, bacon pieces, capsicum , mustard powder to my  original recipe.

Might throw a few sultanas in my next batch.

I grew up with boiled egg and olives in our meatloaf and it was always wonderful at mealtime but even better on a sarnie the following day.  The soaked bread in milk sounds very interesting.

Rick your pic is like the meatloaf I do with eggs in the middle but must admit I haven't used olives. I use a mixture of beef mince and sausage meat and whatever else comes to hand, tomato sauce, jam etc, I do it in the CO in a loaf tin and on a trivet.
Thinking I haven't done one for awhile   Tongue
