We have stayed at the Bell Park Caravan Park in Emu Park for the last 3 Easters. Camped twice and in an onsite cabin once.
Fantastic location - just south of Yeppoon. Nice low-surf beach (patrolled), plenty of fishing areas, about half an hour out of Rockhampton. There is a Super IGA there for groceries and other little shops. The local pub does great meals!
The caravan park has excellent sites and all the usual amenities (they are a little worn and need a bit of renovating but are in perfect working order). Easter and Christmas are busiest times (of course) and you need to book at least 12 months ahead for a site for these times of the year. It is right next to a skate park and public swimming pool, and there is a wonderful museum with heaps of information about the local area and its growth.
There is a crocodile farm not far out of town, and the Capricorn Caves are just north of Rockhampton - which are very interesting places to visit.
Yeppoon has a shell museum.

Thanks for putting in the link, Rufz.
I forgot to mention the fantastic views of all the islands in the area as well. Which you can see from the main picture on the home page.
