Hi guys. Just wanted to know what veggies you like to cook in your camp ovens with roasts or by themselves. We're after something more exciting to have with our potatoes and pumpkin when we cook a roast that's all. Thanks in advance, Paul.

Try a full garlic in your roast. Turns out sweet tasting. Learnt this from Deano on here.

We love roasted chunks of beetroot in our veggies.

Use a lot of sweet potato now, also roasted Brussels sprouts taste superb Smiley if you like Brussels sprouts that is  Cheesy

Adding to above are parsnips, whole baby squash, whole small pumpkin scooped out and filled with chopped mixed vegetables, carrots, whole zucchini, whole onion, corn cob pieces . . . who can add more ????

As Rufzguts says, whole garlic.
But don't peel it first, chuck a dozen cloves in and mix around. The skin just drops off later.
Derek's first mention is parsnips, and that would be mine too.
Baked Kipfler potatoes are a favourite with us, chunks of red and green capsicum, orange kumera as well as the usual suspects.
We often make a baked vegetable medley cooked separate to the meat which I usually do outside in a Kamado cooker.

Paul, have you tried roasted beetroot ? Just do it as you would pumpkin etc.

Thanks everyone. Certainly some great ideas there. Last time we added whole sweet Potato and cut length ways when cooked and added sour cream and chopped chives as per someone's recipe on the site (LG perhaps ????). Turned out great. Rufzguts & Rob, The only time I eat beetroot is when I'm wearing a good shirt and end up with it everywhere. Thanks for sharing your ideas and i'll be sure to try some next time. Keep them coming if anyone can add to the list. Cheers, Paul.
