Chinese stile Pork Spare Ribs

Ingredients
1 kg Pork Spare Ribs
4 tablespoons barbecue sauce
4 tablespoons honey
4 tablespoons vinegar
1 tablespoons Chinese chilli sauce ( I used Byron Bay Chilli Sauce)
¼ teaspoon Chinese five spice
½ cup dry sherry
2 tablespoons soy sauce
1 clove garlic crushed.
2.5cm piece green ginger ( I used ginger paste)

method
Put pork ribs in campoven and cover with water, then bring to the boil. Reduce heat and simmer covered  for 20 minutes.

Combine barbecue sauce, honey, vinegar, chilli sauce,  five spice, sherry, soy sauce,  garlic and ginger, and mix well.
Take pork out of campoven and place in container  and pour sauce over them, and leave to stand four one hour. (I could have just drained the water and left the ribs in the campoven for this.)

Bake in the camp over four around one hour until tender. ( I had the lid cracked to let the steam out helping thicken the sauce)

I served with rice and a salad.

It must have been good.

West Coast Ginger and Sweet Soya Whiting
1/3 cup honey
1/4 cup reduced-salt soy sauce
Small piece of ginger, peeled, grated
1 teaspoon sesame oil
Fish fillets
Asian salad greens and a lime to serve

Combine honey, soy, ginger and oil in a saucepan over medium heat. Cook, stirring, until marinade comes to the boil. Set aside to cool.
Add fish to cooled marinade. Turn to coat. Cover. Refrigerate for 30 minutes.
Preheat your barbecue on medium heat. Remove fish from marinade, reserving marinade. Cook fish, brushing with marinade  until cooked. Place onto plates.
Serve with Asian salad greens.

Asian Chicken Soup
...

Ingredients
1 large chicken breast
Chicken Stock
¼ cop soy sauce
1 table spoon brown sugar
¼ teaspoon chilli sauce( or more if you wish)
2 tablespoons lemon juice (or lime Juice)
1 teaspoon lemon or lime zest
1 teaspoon of ginger
3 table spoons corn flour
mushrooms of your choice sliced
½ a red capsicum sliced
vegetables of your choice
Directions
Combine the stock, soy sauce, brown sugar, chilli sauce, lemon juice and ginger and bring to the boil.

Coat the chicken with the cornflour and then add to the soup with the mushrooms, and simmer 15 minutes or until chicken is cooked.

Add all of the vegetables and the zest and then remove from heat and let stand for 2 to 3 minutes before serving.

Sweet Chilli Crabs


Ingredients:

3 Blue Swimmer Crabs, sweet chilli sauce, onion, spring onions, garlic, fresh and tinned tomatoes, salt & pepper.

Method:

Clean and break crabs into sections and shatter the claws so that the sauce infuses into the meat when cooking.

Eat with your fingers, sucking every bit of the juicy meat from all sections and legs.

The leftover chilli sauce is delicious to eat on its own.

Asian Style Drumsticks

No exact measurements. Just added as I went.

Marinade drumsticks with Gourmet Garden Thai Stir-In Seasoning (blend of finely chopped lemongrass, ginger, coriander and chilli) soy sauce, garlic, honey, chopped onions, sweet chilli sauce.

I added apple juice to this and simmered in the campoven for an hour and a bit.

Added jullianned carrots, red capsicum, spring onions and sliced green beans and cooked for a bit more.

Last, in went some Bok Choy and placed the lid on for 5 mins.
