This is a very simple Indian vindaloo curry using Pataks Curry Paste

INGREDIENTS

1/2 jar hot Pataks vindaloo curry paste
750 gms diced beef (I used shin)
2 cups diced sweet potato
2 cups cauliflower florets
1 tin diced tomatoes
Sufficient water to just cover ingredients

METHOD
As I said in the opening this is a very simple recipe as should all camp oven cooking.  Simply place everything in a camp oven and slow cook for two hours stirring occasionally.

Serve with steamed basmati rice

Thanks Derek sounds easy, I love hot food and i love Indian food I'll be giving this one try one day soon,
I cooked one of your pizza recipes you put up awhile ago  today Derek  (sweet Chile and garlic prawns) I made the base as you suggested and it was very very nice aswell thanks

I couldn't agree more Derek. I love using sweet potatoes in my currys and usually use more than one type at the same time and cut them to different sizes so the little ones form the stock. Yum. Smiley
