Hi All,
Wondering if any of you have ever tried to cook a piece of Deer rump roast (field dressed) in a camp oven. Any. Receipe ideas.

Hi John and welcome to the forum.

Quite some years ago I was given two red deer rumps. What I did was cut a pocket in them and fill it with smoked oysters. Then wrapped in streaky bacon and cooked in the camp oven on a trivet. 

No fat on venison, hence the bacon for moisture. Cannot recall how long I cooked it for but end product was medium rare.

Was very nice but family not happy to eat Bambi so didn't try again.  Cheesy

I haven't cooked venison, but I find that piercing game meat many times and rolling and soaking in

seasoned olive or canola oil improves the texture and taste.

G'day John,
I have roasted prime cuts of field dressed venison in a camp oven however it should be well hung prior to roasting to ensure it is tender enough. As with most game it's a good idea not to over cook it. I like medium rare and as Derek suggested use plenty of fat to roast it in. I also like to rub lashings of garlic and seasoning into the meat prior to roasting. Also ensure the meat regularly basted during the cooking process and it should come up a treat.w I  Wink
