Isn't it amazing that a simple thing like making a rum raisin damper and have it turn out can get the endorphines going and you get that silly grin on ya face that goes from ear to ear. The hardest part of this for me was soaking the raisins & sultanas in the rum for 24 + hours without sampling them for quality control purposes.
We actually had this as an after meal snack with coffee sliced up with lashings of whipped cream & home made japoticaba jam & some just had butter & glden syrup. mmmmmmmmmmmmmmmmmmmmmmm..........

That certainly looks the goods.

Used to cook quite a few of those when I was doing cooking demos. Used to soak the raisins in the rum the night before and always did extras and handed a few out to people.
