Been playing with this recipe for a while now.  Cooked one at the Towitta COG and this one today.  I think I have it down pat and ready to share.

Ingredients
4 Cups self raising flour
1 1/2 cups chopped dates
Pinch salt
40 grams butter
1/3 Cup castor sugar
Milk

Method
Add the pinch of salt to the flour then rub the butter through until it resembles bread crumbs.

Mix through the sugar and dates and then mix in the milk until you have a soft but wet dough.  Now I never measure the milk but this recipe seems to take about half a litre.

Turn out onto a floured board, knead a little to bring it all together and mood into a round.

In a pre-heated camp oven sprinkle some flour onto the base to lightly cover it.  Pop in the dough and cook for around 50 minutes.

Well done. That recipe sure does make a good damper.

Have cooked that many times at a COG.

Another variation to try is to replace the dates with raisins or sultanas that have been soaking in a little rum overnight.  Wink
