I have a wild yeast starter (sourdough) that I made about 12  years ago from orange juice obtained from a Navel orange tree in my backyard. I keep it in a crock in the fridge and replenish it every couple of weeks or so when I bake bread. It is very active and needs no additional store bought yeast to work.
I bake two types of sourdough bread. One is made with white bread flour, buttermilk, and eggs, and the other is a whole grain loaf I make with hard red winter wheat ground in my Kitchenaid mill, with 7-grain cereal soaked and added. It is a very wholesome loaf.
Rise times are longer than with regular yeast, sometimes twice as long depending on the temperature of the house.
