For weeks Maggie has been asking me to make a bread and butter pudding.  I always like making it with Brioche Bread because it is rich in butter and eggs so when I saw Hot Cross Buns in Aldi today I just knew what I was going to do with them.

These were made in my personalised 9 inch Billmans Camp Oven.

Ingredients
5 Hot Cross Buns
Butter
Jam (I used raspberry)
Cup of Raisins
4 Eggs
1/2 cup castor sugar
Around half a litre milk

Slice the buns in half and spread with a generous layer of butter and jam.  Place them in the camp oven pre-greased with butter and sprinkle over the raisins.

Beat together the eggs, milk and sugar and pour over the buns.  The buns will try and float so wait a while for them to absorb some of the liquid

Onto the heat.  Four Heat Beads under and a full ring on top.

Cook for 35 minutes.  I like my pudding dark on top so added a few extra Heat Beads for the final 10 minute

Here we have a lovely Easter Dessert made with Hot Cross Buns with a soft jam filled centre, a delicious caramel topping and a smooth egg custard

Serve with a dollop of double cream

Each bun has a smooth jam centre

It is interesting that I first cooked this in Easter 2018 just on a whim and not from any known recipe as I can honestly say I had never seen one.

Now I am seeing recipes all over the place  Cheesy
