As the winner of our January "Your go to meal when camping" challenge with his Beef and Red Wine Casserole, TBF has nominated "Dessert with eggs" for our March challenge. Place entries here, no general chat.

Baked Ricotta with Mix Berries

2 Eggs white
6 Tablespoon Honey
1 Cup Ricotta Cheese
2 Cups Mix Berries

Beat egg whites until stiff peaks form.
Mix thought 4 tbs honey and ricotta cheese.
Once combined, pour into a small oven proof dishes and bake until cooked.
Place berries in a sauce pan and heat gently until softened. Stir through 2 tablespoon honey and allow to simmer for 20 minutes.
I serve with ice cream.

Pavlova

Ingredients
5 egg whites
1 cup caster sugar
2 teaspoons cornflour
1 teaspoon vinegar

Method
Beat the egg whites until they are fluffy. Add the rest of the ingredients and beat until the mix is smooth and forms soft peaks. Put onto a tray and form a cake shaped thing.
Place in a preheated camp oven. I used a 16" inch oven with 18 beads on top and 6 underneath. Avoid the temptation to have a look and leave it for a couple of hours until the beads have burnt out and the oven is starting to cool.
Top with whipped cream and whatever fruit you desire

Baked Rice Custard

1/3 cup  cooked rice
¾ cup condensed milk
3 egg, lightly beaten
¼ cup sultanas.

Combine condensed milk ,eggs ,rice, and sultanas with 1 and 3/4 cups water and mix thoroughly . Pour into a shallow oven proof dish.
Put dish in camp oven, with enough water in the camp oven to be half way up the sides of the dish.
Bake for 40 minutes or until set

Chocolate sponge Pudding

Chocolate sponge Pudding mix
40g soft butter
1 egg
40ml water / 375ml boiling water

I just used the method on the box, and cooked in my camp oven.
I served it with long life cream, as well as ice cream.
I had planed to cool something while we were to be camping last weekend, Cyclone Trevor put a stop to that.
I had thought about adding Nestle Rolo chocolate but something got it first.

Simple Baked Egg Custard

Ingredients

2 Cups full cream milk
2 Eggs
4 Tablespoons castor sugar
Nutmeg

Method
Beat together the milk, egg and sugar.  Pour into small ramekins then grate over some fresh nutmeg.

Place ramekins in camp oven and pour in sufficient hot water to come up to the level of the mix into the ramekins.

Bake on a medium/low heat for about 50 minutes until custard is set.

Apple Meringue Pie
1 sheet pastry
1 tin pie apples
3 eggs
1/2 cup caster sugar

Blind bake the pastry.
Fill with apples.
Beat egg whites till they start to form peaks then add caster sugar and beat until sugar is dissolved.
Spread egg whites on apples and bake till brown on top.
