LAMB SHANK CASSEROLE

Ingredients

2 lamb shanks
1 carrot
1 large onion
Salt & pepper
1 tin whole baby tomatoes
1/4 jar PATAKS Vindaloo curry paste
1 cup beef stock

...

Place shanks in casserole dish and sprinkle over chopped onion, chopped carrot and whole tin of tomatoes

...

Mix curry paste into the cup of beef stock until paste is dissolved then pour over shanks.  Season with salt and pepper to taste

Onto the heat and slow cook for three hours

Serve with your favourite vegetables.  I used mashed potato and broccoli

Contented.  The meat fell off the bone.

Madras Steak  Casseroled
from Day to Day Cookery Book

Ingredients

Blade steak
butter
2 tablespoons flour
2 teaspoons curry power
2 teaspoons sugar
salt and pepper
2 onion
1 apple 
1 tablespoon vinegar

Method

Place piece of steak in a greased camp oven. Spread surface with a little butter.
Sift seasoned flour over meat and bake in hot camp oven for 15 minutes.
Grate onion ans apple and sprinkle on top. Mix water ,vinegar , curry power and salt and pepper. Pour over meat .cover with a lid. Bake in a slow camp oven for 2 hours .Serve with vegetables.

Pea and Ham Soup

Ingredients
Pork bones
Split green peas
Diced celery
Diced carrot
Diced onion
Diced pumpkin
Chicken stock
Bay leaf
Salt and pepper to taste

Method
In a preheated camp oven, start frying off all the vegies, stirring regularly so as not to brown or burn. Throw in the ham bones, bay leaf, stock and top up to desired level with water. Add a bit of pepper and stir mix together. Place over enough heat beads to have a rolling simmer. Keep heat beads topped up and allow to simmer for about 3 - 4 hours. Serve with crusty bread

Beef Cheek Stew

Beef Cheek
chorizo chopped
Onion chopped
Mushrooms sliced
Mushrooms in butter sauce
Spring Onions chopped
Carrot chopped
Whole potatoes tinned

In the campoven fry the chorizo in a little oil, once done brown the meat in the chorizo oil. I removed the meat and also cooked the onions until they were soft.
Added the stock concentrate with some water, along with the tinned mushrooms, beef, chorizo, and carrots.
As I used the choffer I used 13 heat beads only on the bottom and waited until they were burnt out.
I then put another 13 heat beads under and brought the stew back to a simmer. Then adding the fresh mushrooms, spring onions and canned potatoes.

Beef Curry

3 Tbps cooking oil of choice
2 Brown onions diced
2 Carrots diced
1.5 kg gravy beef cut into 2cm cubes
Salt and pepper to season
1 1/2 Tbsp mild curry powder
1 Cup chicken stock
1 Tsp brown sugar
2 x 420g cans of tomato soup
1 x 400ml can of coconut cream
2 potatoes diced
Plain flour

Method

1. Preheat camp oven
2. Put beef in a bowl and season with salt and pepper. Add flour and toss well to coat
3.Place cooking oil and beef into the camp oven and brown the beef
4. Add vegetables
5. Add stock, sugar, tomato soup and curry powder and stir to combine. Bring to the boil and cook for 2 hours.
6. Add coconut cream and stir in and cook for a further 15 minutes

Rice

1. Place rice in cheese cloth and tie each end closed.
2. Boil water in your camp oven. Once on the boil add the rice, bring water to the boil again and cook for 12 minutes.
3. When cooked remove rice, open one end of cheese cloth and let the rice fall into a bowl ready to serve.
