Hi everyone
It's been a year since a camp cook up due to a car accident.   But this weekend I have my children and their families coming.  I would appreciate your input regarding the menu.  As always there are the vegetarians, the lactose intolerant and the gluten free folks.   So far the menus as follows
Roast chicken with a rub
Lamb shanks
Beef goulash
Baked gnocchi
Vegetarian lasagna
Spuds -not sure if I should mash boil or bake
Flat bread
Rice
Greens - not sure how to do these boil or stir fry.
I haven't thought about desert yet.
All advice gratefully received
Jayne

Hi Jayne and welcome back to the forum.

That sure is a feast to cook up.  Hope you have plenty of camp ovens.

With that many people I would bake the spuds.  Get lots of baby potatoes and just slow bake in a big or a few camp ovens.

For desert try a chocolate self saucing pudding with custard.

You have some nice dishes there to cook up for sure.

Welcome back Jayne.
Great line up of food there.
Consider a second dessert of Sticky Date Pud with butterscotch sauce.
Mind you with that array of food you may want to keep the work down and have just ice cream.

Hi Derek
Thanks for the feedback.  I'm in Dalby and it's cold so a nice sweet dessert would go down a treat

Try this recipe Jayne.  I have doubled it for a 12 inch or 9 quart camp oven with no problem a few times.

Was 5 degrees down here this morning.  Brrrrrrrrr.

Thank you very much for the recipe.   Quite exotic especially for a camping weekend.   I will definitely put this in my cooking folder.
Cheers
Jayne

Hi everyone
The weekend went well.  Food went down well and the vegans even took the leftovers.  Smiley The young ones hit the town so we had all coming in at various hours.  The house and yard were filled with beds and swags. There were firepits in locations to keep people warm.
Big breakfast the next day and this nana and poppy fondly wave goodbye yesterday afternoon to go promptly for a nap.
As you can see I (my day off work) am still cleaning up today. But it's-4.3 according to bom so I hve gone back to bed Wink
