Went over to the daughters house this afternoon to raid her citrus trees. Picked two shopping bags full and made four jars of preserved Lemons. Bought one bag home.
Thinking of keeping one till the next COG and we could have a challenge using them

We also juiced more lemons and had six cups to freeze and one cup added to the cold water jug. Will be doing more lemons tomorrow as well as grape fruit. Cheers

Hi Derek using the daughters recipe which is very simple.

Layer of salt, layer of lemon quarters, top with olive oil, more salt and keep repeating. Add pepper corns. Bay leaves or chillies what every you feel like.

Sterilise the jars, we pulled one jar and lid at a time and packed quickly so the heat was still in the jar when sealed.

Thats about it. Cheers

I believe quite common in Greece and other European countries. Most foods have a way of preserving during a glut or to ensure a supply during the off season.

Lots of lemon juice frozen
Lemon peal we are doing as lemon candy.
The water the peal was simmered in will be lemon syrup.
The pulp is being dried and used in cooking and sweets.

So this year no waste and limes will be washed, dried cut in quarters, vacuum sealed and frozen for a few gin and tonics during summer. Cheers
