CHEESE STUFFED CHICKEN BREASTS WRAPPED IN BACON

1 Chicken breast
50 grams of Camembert cheese (or cheese of your choice)
3 strips of streaky bacon
Olive oil spray

HOW TO

Cut a pocket into the side of the chicken breast
Stuff the cheese into the pocket
Wrap the bacon tightly around the chicken and secure with a skewer
Place on a lightly oiled oven tray or base of a camp oven and cook for about 45 mins 200C

BACON WRAPPED POTATOES WITH BLUE CHEESE SAUCE
Olive oil spray
4 strips of streaky bacon (cut in half)
8 small potatoes
Ground black pepper
1 cup sour cream
50 grams crumbled blue cheese
2 very finely sliced shallots

HOW TO

Wash potatoes and pierce each about 8 times with a skewer. Tightly wrap bacon around each one using a tooth pick to secure.
Lightly oil the base of a preheated camp oven and place potatoes in the camp oven.
Oven will need to be about 200C.
Turn after about 25  mins and cook for a further 25 mins.
Try a skewer on the potato to determine if cooked through.

In a bowl combine the sour cream, blue cheese, shallots and pepper. If desired add a little milk
if the mixture is not smooth enough.  Drizzle the sauce over the potatoes. For those who
don’t like Blue Cheese, simply omit the cheese from the sauce.
