Pizza

Ingredients
Pizza dough
Sliced pepperoni
Sliced cabanossi
Diced bacon
Diced onion
Diced capsicum
Pineapple pieces
Sliced mushrooms
Anchovies
Mozzarella cheese
Pizza sauce
Oregano
Chilli powder

Method
Spread pizza dough out on a pizza tray. Spread pizza sauce over dough and start adding other ingredients in preferred order or randomly like me. Top with cheese, and top cheese with a sprinkle of oregano and chilli powder. Bake in a preheated camp oven with most of the heat on top for about 20 minutes or until starting to brown.

STICKY PINEAPPLE CHICKEN

INGREDIENTS
1 pineapple (Hollowed out with 1/2 cup pineapple juice and 1 cup pineapple pieces reserved)
1/3 cup soy sauce
1/3 cup chicken stock
1/3 cup hoisin sauce
1/2 cup brown sugar
1 Tablespoon fresh garlic
2 teaspoons cornflour
1 Tablespoon olive oil
6 boneless skinless chicken thighs diced into 1 inch cubes
1/2 cup roasted, salted cashews (optional)
Rice for serving

METHOD

Remove the flesh from the pineapple.  Dice some pineapple and juice some

Whisk together in a camp oven pineapple juice, brown sugar, hoisin, crushed garlic, soy and cornflour.  Heat camp oven while stirring.  Simmer until reduced by half To create a very sticky sauce. Set aside.

Heat a heavy pan, add the oil and cook the chicken.

Add cooked chicken, pineapple pieces and cashews to the sauce, return to the heat and simmer for a few minutes

Serve with rice in the hollowed out pineapples sprinkled with a few sesame seeds.

Hawaiian Pineapple Chicken
Ingredients
¼ cup butter
⅓ cup Tomato Sauce
¼ cup brown sugar
2 teaspoons cornflour
¼ cup vinegar
1 teaspoon salt
1 teaspoon soy sauce
½ teaspoon Worcestershire sauce
1 can crushed pineapple
1kg assorted chicken pieces

Method

Melt butter in a camp oven over medium heat. Stir tomato sauce and brown sugar into melted butter, stirring to dissolve brown sugar. Whisk cornflour into vinegar until smooth, and pour into camp oven. Whisk constantly and add salt, soy sauce, and Worcestershire sauce to mixture. Bring to a simmer and cook until thickened, about 2 minutes. Stir pineapple into sauce.

Arrange chicken pieces in the camp oven and then bake until sauce is bubbling, and chicken is browned, and the juices run clear, about 45 minutes.

Sweet and Sour Pork

1 cup pineapple pieces ( drained )
500g pork
1 cucumber
1 capsicum
2 onions
4 shallots
cornflour
oil
100 g mushrooms

Sauce

1 ½ tablespoons sugar
1 tablespoon soy sauce
¼ teaspoon salt
2 teaspoons tomato sauce
¾ cup pineapple juice
2 teaspoons cornflour
salt and pepper
3 tablespoons vinegar

Method

Mix together sugar, soy sauce, salt and vinegar. Cut pork into small pieces and place in a sauce mixture. Stir well to coat pieces of pork with marinade. Stand for 1 hour, stir occasionally.

Slice onion, chop shallots diagonally, cut mushrooms, cut cucumber into chunky strips. Fry onion in oil until clear add capsicum and shallots and cook for a further 4 minutes.
Add mushrooms, cook until soft. Stir in pineapple piece and cucumber.

Drain meat from the marinade toss in cornflour. Fry in oil until cooked through.

Add meat to vegetables and keep hot. Blend cornflour with pineapple juice, add tomato sauce and remaining marinade. Bring to boiling point stirring continuously. pour sauce over meat and vegetables and stir to coat evenly.
Serve with rice.

Boiled Pineapple Fruitcake



Ingredients


500g dried mixed fruit,
1 cup brown sugar
155g butter
1 (450g) crushed pineapple
2 eggs
1 cup plain flour
1 1/4 cup self raising flour
1 teaspoon mixed spice
1/4 teaspoon bicarb soda


Method


Preheat oven to 160 degrees C. Line a 20cm round cake tin with baking paper.
Place the dried fruit, sugar, butter and crushed pineapple (including juice) in a saucepan. Bring to a boil and simmer for 5 minutes. Let mixture cool.
Beat the eggs slightly then stir into the fruit mixture.
Sift together the flours, mixed spice and bicarb soda. Combine with the fruit mixture, when well mixed pour the batter into the prepared cake tin.
Bake for 2 1/2 hours, but test after 2 hours. Remove cake from oven and allow it to cool in the tin for 5 minutes, then turn it out onto a cake rack, remove baking paper and let cool.
