Once again extreme fire conditions are preventing any outdoor cooking so cooked this inside.

When I was recently in hospital Maggie found these nice ceramic baking trays at K-Mart

...

Tonight I decided to give them a run so cooked a bread and butter pudding.  I always use brioche bread in my puddings as they are rich in butter.

...

Recipe is straight forward.  Jam on the bread and cut in half. Layer in the tray with a sprinkle of sultanas between each layer.  Beat the eggs into enough milk to pretty well fill the tray, add to that a teaspoon of vanilla and a quarter cup of sugar then pour it over the prepared bread then grate over some nutmeg

...

Into the oven for 35 to 45 minutes until set and browned on top

...

Perfect!!!!!!

Hi Derek
Every thing looks so great. I Like the baking dishes.
The bread and butter pudding yum, yum. It makes the
serving tray look good too . Brings back memories.
What did you have with it.?  maybe some cream or some stewed fruit.
regards Kev

Yesterday when I was baking bread one of the loaves stuck in the tin and I had to pull it apart to get it out.

Waste not want not.  Turned it into a bread and butter pudding.   Smiley

No cinnamon in this one but lots of nutmeg on top.  Was surprised how nice it was with the whole grain bread.

This turned up in the local paper today, in a Foodlands (SA version of IGA) brochure:
