Boston Baked Beans

Ingredients
1 onion finely diced
Diced bacon
1 teaspoon paprika
2 tablespoons brown sugar
2 tablespoons tomato paste
1/3 cup of honey
1 tablespoon worcestershire sauce
2 cans of borlotti beans drained and rinsed
2 cans diced tomatoes

Method
Put a splash of oil in a hot camp oven. Throw onions in and cook till softened. Add bacon bits and cook for a couple of minutes. Add paprika and stir for about a minute then add sugar, tomato paste, honey and worcestershire sauce and cook for a few minutes while stirring until combined. Add beans and tomato cans. Put on camp oven lit and add a few heatbeads on top and let the mixture boil gently for 10 to 20 minutes until the sauce has thickened and the beans are heated through. Serve alone on toast or as a side to bacon and eggs.

German Pancake

1/2 cup Plain flour
3 eggs
1/2 cup milk
3 tblsp melted butter
1 tblsp sugar
Good pinch is salt
Fresh fruit of choice

Preheat hooded bbq to 220c. Whisk eggs, milk, melted butter, salt and sugar.
Add the flour and stir until fully combined.
Pour into a greased 10 inch skillet and into the bbq/oven and bake for about 15 mins or until the edges brown.
Top with fruit and dusting of icing sugar.

Curried Breakfast Beans with Cheese and Spinach Filled Bread

Ingredients

Method
Dice onion and stir fry in a little oil until soft.  Add curry paste (I used Korma Paste) and stir fry until fragrant

Add coconut milk, sugar and drained beans and cook until beans are heated through, about 5 minutes

Place 1 and 1/2 cups flour in a bowl and mix in a tablespoon at a time of Greek Yoghurt until you have a nice dry dough.  Cut the dough into 4 pieces, roll out and add chopped spinach and cheese then fold over and roll again to seal

Cook on a dry grill until browned

The cheese will melt and wilt the spinach

...

Served together this makes an excellent breakfast dish.

Liver
Bacon
Plain Flour
Eggs
Cheese
salt and pepper

Method

Chop Bacon and liver into bite sized pieces. Coat liver in flour seasoned with salt and pepper.
Fry bacon first, then in the bacon fat fry the liver.
In the pan add a little flour and water to make a gravy, then return liver and bacon to finish cooking.
I made a simple scrambled egg with some grated cheese and served on toast.
