BACON FRITTERS

Ingredients


1 cup self raising flour
1 cup of milk
1 egg
Bacon

...

Method

Mix flour, egg and milk together until no lumps. Cut rind off bacon and cut into smallish pieces then fry on a grill.  Spread bacon pieces across the grill and pour batter over each piece.

Cook in the bacon fat left on the grill

When cooked flip over and you will find the bacon embedded in the fritter

...

Serve with your favourite sauce

Or chutney

...

Or drizzle over some maple syrup

Apple Fritters

2 Cups apples peel and diced
2 cups self rising flour
˝ cup brown sugar
2 eggs
1 cup milk
3 tbsp melted butter
1 tsp cinnamon

Instructions

Mix flour,sugar. and cinnamon together using a fork to break up any lumps.
Add in milk ,melted butter and eggs . Stir well to combine.
Add dice apples,to batter ,stirring in.
Drop by 1/8 cups fulls into hot oil and turn to allow to brown on both sides.
Drain on paper towel lined  plate.

Serve.  I used maple sauce and blueberries on top.

CORN AND CHEDDAR MASHED POTATO FRITTERS
Ingredients

1 cup Mashed Potatoes
1 cup corn
Spring onions, chopped
Shredded Cheese
1  Egg
˝ cup  self raising flour
Oil, for frying ( I cooked on the hot plate)
Salt and Pepper

Directions

Heat oil in a frying pan over medium-high heat until it is hot.
Combine all remaining ingredients in a bowl and mix well.
Slowly drop rounded kitchen soup spoons into the oil and flatten the potato mixture slightly.
Cook 2-3 minutes per side, allowing them to turn golden brown.
Remove and drain on paper towels or brown bags to remove excess oil.

Fritter Medley

Basic Batter

450gms  SR Flour
2 eggs
Salt
500 mls milk

For starters, add corn to the batter and top with smoked salmon, sour light cream and capers.

For main, add corn, diced spam to batter.  Serve with more corn and spam and a dollop of sour cream.

For dessert add grated granny smith apple and chopped  ginger to the batter. Serve with icing sugar, more gi ger and ice cream..

Leftover Roast Meat Fritters

Ingredients
3 cups SR flour
2 cups milk
2 eggs
Leftover brisket, cubed
1 can corn kernels
1 red onion

Method
Sift the flour into a bowl. Whisk together the eggs and milk separately. Slowly add the liquid mixture to the flour while mixing together. Add the meat and vegetables and combine. Season if desired. Cook on a preheated BBQ for about 5 minutes each side. Serve with sauce or just eat as is

Corn Beef Fritter

1 cup Left over corn beef
1 3/4 cups Self raising flour
1 teaspoon Salt
1 cup Milk
spring Onion
corn
carrot
egg

Combine the ingredients to make a batter then add meat and other ingredients gently mixing together.
Using a tablespoon scoop filling into pan
Fry until golden and turn over and repeat.
