Curried Breakfast Beans with Cheese and Spinach Filled Bread

Ingredients

Method
Dice onion and stir fry in a little oil until soft.  Add curry paste (I used Korma Paste) and stir fry until fragrant

Add coconut milk, sugar and drained beans and cook until beans are heated through, about 5 minutes

Place 1 and 1/2 cups flour in a bowl and mix in a tablespoon at a time of Greek Yoghurt until you have a nice dry dough.  Cut the dough into 4 pieces, roll out and add chopped spinach and cheese then fold over and roll again to seal

Cook on a dry grill until browned

...

The cheese will melt and wilt the spinach

...

Served together this makes an excellent breakfast dish.
