Smoked Lamb Roast

Ingredients

Lamb roast
Dry rub
Beef stock

Method

To prepare meat, make up 250mL of stock and inject into meat. Apply a generous layer of dry rub over the meat. Get some charcoal fired up and place the roast in over indirect heat. Put a couple of chunks of smoking wood on the coals, ensure temperature settles around 110-115°C and then forget about it for a couple of hours. Top up smoking wood as required. When internal temperature of meat got to 59° I found it started to stall, so wrapped in alfoil, added fresh charcoal and reinserted temp probe. Try to forget about it for another couple of hours. I aimed to get it to 95° but ran out of time so took it off at 75° and allowed it to rest for half an hour before serving.
Put meat on at 9:30am, took it off at 4:30pm

Sushi Roles

Sushi Rice
Sushi Vinegar
Seaweed sheets
Filling of your choice
Scrambled Eggs, tuna, crab, prawns, cucumber, avocado, lettuce, etc.


Cook the rice and then let stand for 15minutes.
Sprinkle Sushi Vinegar over warm rice and mix though.
On the Seaweed sheets put some Sushi Rice and pat down.
Put filling of choice on the rice and role tightly using a Sushi Mat.
Cut roles to size and serve with dipping sauce of choice.

This makes a good dish for afternoon nibbles and drinks, camping. Smiley

Okonomiyaki
For the okonomiyaki sauce
1½ tbsp tomato ketchup
½ tbsp Worcestershire sauce
2 tsp runny honey
1 tsp dark soy sauce
For the okonomiyaki pancakes
3 large free-range eggs
3 tbsp plain flour
½ tsp sea salt
½ tsp dark soy sauce
½ tsp toasted sesame oil
2 large spring onions, thinly sliced
275g/9¾oz white cabbage, shredded
sunflower oil

Method

For the okonomiyaki sauce, whisk together the tomato ketchup, Worcestershire sauce, honey and dark soy sauce in a small bowl until combined. Set aside.

To make the okonomiyaki batter, whisk together the eggs, flour, salt, soy sauce and toasted sesame oil until smooth.

Fold the spring onions and cabbage into the batter until everything is well coated.

Spoon some of the cabbage mixture into the pan into pancake shapes that are about the size of your palm. Press down with the back of the spoon and fry until golden-brown on each side, flipping halfway. Transfer the pancakes to the kitchen paper to drain.

Serve the pancakes drizzled with the okonomiyaki sauce.
