Anyone who knows me, knows I love a pie.  Over the years though I have had so many substandard ones I decided the only way to keep up the quality was to make my own.

I like using the small springform cake tins as they make a good meal sized pie.

Had some left over chicken vindaloo curry in the fridge but also had a hankering for some veggies so thought to myself why not combine the lot in a pie.

So set to it.  Three sheets of flaky pastry from the freezer thawed out.  Part steamed some potato, carrot and peas. 

Started by lining the pans with pastry leaving some overhanging for the seal, put in some curry then layered carrot, potato and peas.  Put on a top and crimped with my fingers to seal.  Washed it with an egg yolk then into a preheated camp oven, Weber Q or other hooded BBQ or the oven at home at around 200 degree oven for around 50 minutes.

Absolutely superb.

I keep looking at these pies.....one would make a fine snack about now after a day in the garden...washed down with a gin and tonic.
