Afternoon tea today

Ingredients
250 g dates, chopped
250 ml (1 cup) Strong Black Tea
20 g (1 tblspn) margarine or butter
185 g (3/4 cups) caster sugar
1 tspn bi-carbonate of soda
2 cups SR flour
1 tspn ground cinnamon
1 tspn ground mixed spice

Method
Pour tea on dates in a largish pan and simmer 5-10 minutes until fairly mushy and the tea is largely absorbed.

Add butter or margarine, stir until melted, then add sugar and bi-carbonate of soda, mixing well.

Stir in spices and flour, mixing until smooth. The mixture will be quite thick.

Spoon into a greased loaf tin, and bake in a preheated WeberQ, other hooded bbq, camp oven or other oven at home or in your RV at around 180 degrees for 40-50 minutes.

Stand in tin for 10-15 minutes before removing and cooling on a wire rack.

Best serve with butter

That Looks very nice. Thank you are posting the recipe.
The cake looks  like what I used to call a "Fruit Brownie"
I will try the recipe using Gluten free flour.
