Yesterday I posted a vindaloo chicken curry and tonight decided to cook some naan breads to go with the leftovers.

This is my version of naan as I find it very simple to make and it works for me.  The ingredients are sufficient for four breads.

Ingredients
1 cup self raising flour
Greek yoghurt
Grated mozzarella cheese
Garlic infused olive oil

Method
Sieve flour into a large bowl and mix into it the yoghurt a tablespoon at a time until you have a nice workable dry dough.  Knead it for a few minutes to make it smooth and pliable.

Cut the dough into four pieces and roll each piece out very thinly on a floured bench.  Sprinkle mozzarella over each piece, fold it over itself and roll it out again really pressing the cheese into the dough.

Cook on each side in a hot dry frying pan, lid of a camp oven or dry grill on the WeberQ until browned just a little. Approx 2 to 3 minutes each side.

Remove from the heat and immediately brush one side with garlic infused olive oil.  I always carry and use Cobram brand garlic oil which I find very nice.

Serve with your favourite curry.
