Derek. The roo tail is jam packed with sinews, unlike oxtail there is only a relatively small amount of muscle.
The sinews are the "engine" of the tail but being basically collagen do breakdown in slow cooking giving the soup a very silky/meaty flavour.
All the Kimberly supermarkets stock them frozen an they dont last long. 9 Grin
