Spaghetti Bolognese

Ingredients

minced beef
bacon
onions
chopped tomatoes can or fresh
1 cup sliced mushrooms
spaghetti
oil, seasons  I used continental recipe base.

Method

Heat the oil in a camp oven and brown the mince, and set the mince aside. I then fried the Onions, bacon, and then the mushrooms before tomatoes and seasoning.
Cover and simmer for 30 minutes ,stirring occasionally.
Cook the spaghetti then drain and combine spaghetti to the mince.
Serve with cheese of your choice.

Spanish Meatballs in Tomato Sauce
Ingredients

Meatballs
500 g/ 1.1 lbs ground meat (a mixture of beef and pork)
2 garlic cloves
1 egg
2 ½ tablespoons dried breadcrumbs
2 tablespoons chopped parsley
¾ teaspoon sweet paprika
¼ teaspoon smoked paprika
¼ teaspoon hot paprika
1 teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil

Tomato sauce

1 medium onion
2 tablespoons olive oil
3 garlic cloves
2 cans chopped tomatoes (each weighing 400 g/ 14 oz)
½ teaspoon fennel seeds
1 teaspoon dried oregano
2 bay leaves
¼ teaspoon cayenne pepper
2 tablespoons chopped parsley
salt and pepper

Method
Place the ground meat, grated garlic cloves, lightly beaten egg, dried breadcrumbs, parsley, sweet, smoked and hot paprika, salt, and pepper in a bowl. Mix well with your hand. Form between 30 and 35 small meatballs, about the size of a walnut.
Heat the oil in a large skillet. Fry the meatballs (in two batches if necessary) until brown on all sides. This will take about 5 minutes. Take the meatballs out of the pan and set aside
Chop the onion very finely.
Heat the 2 tablespoons olive oil in the same skillet. Add the onion and cook it until translucent. Add the finely chopped garlic cloves and stir for another minute.
Add the tomatoes from the can, fennel seeds, oregano, bay leaves, cayenne pepper, and chopped parsley. Add some salt and pepper as well. Stir well and bring to a boil. Simmer on medium-low heat for 20 minutes or until slightly thickened.
Add the meatballs to the pan and heat them in the sauce for about 5 minutes or until cooked through.

Lamb Shank Stew

Ingredients
Lamb shanks
Potatoes and carrots, chopped into pieces
Diced onion
Lamb stock
Canned tomatoes
Red wine vinegar
Beef and red wine casserole recipe base
Garlic powder

Method

Preheat a camp oven, brown off lamb shanks. Add onion and cook until translucent. Add potatoes and carrots and fry off for a minute or 2. Throw in the rest of the ingredients and top up with water if required. Simmer for a couple of hours, turning the shanks occasionally. Is ready when the meat starts to pull away from the bone. Add some frozen peas and corn 5 minutes before serving if desired for a bit of extra colour and flavour

Chicken Nachos

Ingredients
Chicken mince
Chopped onion
Taco seasoning
Can of diced tomatoes
Four bean mix, drained and rinsed
Corn kernels, drained
Corn chips
Grated cheese
Sour cream

Method
Pre heat a camp oven with a little bit of oil. Add the onion and cook for a few minutes. Add the chicken mince, cook for a further 5 minutes or so. Mix in a tablespoon or 2 of seasoning (depending on personal tastes), add the tomato, beans and corn and a small amount of water to make it saucy. Simmer for 5-10 minutes. Serve on a bed of corn chips with grated cheese and sour cream
