Lime and Thyme Squid

Ingredients

Squid rings
Lime juice
Thyme
Garlic chopped
White wine
Olive oil
Butter

Method

Heat oil and butter in deepish frying pan. Add garlic and fry for a minute. Add squid and cook for a couple of minutes. Add lime juice, wine and thyme and cook for another few minutes, season with salt and pepper and serve

Hoisin Pork Rashers
Ingredients
600g pork rashers
Steamed rice and chinese broccoli, to serve
1/4 cup hoisin sauce
2 tbs dry sherry
2 tbs soy sauce
2 cloves garlic, crushed
2 cm piece ginger, finely grated
1/2 tsp red food colouring
Method
Combine marinade ingredients in a small bowl. Arrange pork rashers in a shallow dish. Pour over marinade and refrigerate for 2 hours.
Preheat oven to 210°c. Place a wire rack into a baking dish. Remove pork from marinade and lay in a single layer onto the wire rack. Reserve marinade. Place into baking dish and fill with water to 2 cm deep.
Roast pork for 40 minutes, turning and basting every 10 mins. Serve with steamed rice and chinese broccoli.

Abalone in Cream and Wine

Ingredients
Abalone
100mL Cooking cream
60mL white wine
Diced red onion
A clove of garlic
1 tsp crushed ginger
Butter
Sliced spring onion for garnish

Method
Melt butter in a frypan, add garlic, ginger and onion. Cook for 5 minutes. Add whole abalone, cream and wine, reduce heat and simmer for 20 minutes. Remove abalone, slice thinly and add back into sauce. Season as required and serve

Chicken and beer casserole

Ingredients
8 chicken drumsticks
2 tbsp plain flour
salt and freshly ground black pepper, to taste
1 tbsp olive oil
20 g butter
˝ brown onion, finely chopped
˝ tsp curry powder
300 ml beer
300 g very small Swiss Brown mushrooms
1 leek, cut into julienne 
1 tbsp Dijon mustard
2 tbsp thin cream
2 tbsp chopped parsley

Method
Season the chicken with salt and pepper and lightly coat with flour.
Heat the oil and butter in a wide non-stick saucepan over medium-high heat. Add the chicken and cook until browned on all sides. Add the onion and curry powder and stir for 2 minutes. Stir in the beer, reduce the heat to low and simmer gently for 25 minutes.
Add the mushrooms and leek and bring to a simmer. Cover and cook for 10 minutes or until softened. Transfer the chicken and vegetables to a dish and cover to keep warm.
Simmer the remaining cooking liquid until reduced to ⅔ cup. Stir in the mustard and cream, bring to a simmer and cook for 1 minute or until slightly thickened. Stir in the parsley and adjust the seasoning if necessary.
Spoon a bed of leek and mushroom onto 4 plates. Top with 2 chicken pieces, spoon the sauce over and serve.

Drunken chicken

Ingredients
1.6kg whole chicken
750ml white wine
4 bay leaves
12 peppercorns
1 bunch flat-leaf parsley
1˝ tsp cornflour


Method
Place chicken in a saucepan just big enough to hold it. Add wine, bay leaves, peppercorns and parsley stalks, then pour in water to cover. Set over medium heat and bring slowly to simmer. Cook for 45 minutes, until just firm to touch
Transfer chicken to a roasting pan and bake for 10 minutes, until just browned. Meanwhile, to make gravy, strain cooking liquid into a saucepan and boil rapidly until reduced to 2˝ cups. Mix Cornflour with 1 Tbsp water, whisk into sauce and simmer until thickened.
Carve chicken and serve with greens potatoes and gravy.

My son went prawning this morning,
So Garlic Prawns it is.

500 gms peeled green prawns
Cracked black pepper
Rock salt
6 cloves garlic
Juice of 2 lemons
3 tblsp brandy
300 mls cream

In a mortar and  pestal smash up the garlic, salt and pepper.
Add olive oil to a preheated CO and add the garlic mix to release the flavours.
Add lemon juice.
Add the prawns and when they turn colour add the cream.
Bring to a light simmer.

Served with a little crusty bread, so not to waste the cream.
