This is a new recipe for me and my first cook of it.  Yet to try it in a camp oven or Weber but do not see any problems with that.

Very similar recipe to the old Parmalat flavoured milk fruit cake however around an hour less cooking.

The condensed milk adds a big sweetness to it and the Baileys flavour is amazing.

Will do this one again.

Ingredients
1 kilogram mixed dried fruit
3/4 cup Baileys Irish Cream
1 can sweetened condensed milk
1/2 cup water
2cups self raising flour

Method
Place fruit in large bowl and add Baileys, water and condensed milk and stir to completely mix.  Cover bowl and place in the fridge over night.

Next day remove from the fridge and give it a good stir and allow to come to room temperature.

Fold through the 2 cups of flour and place in a well greased and lined cake tin.  I also put a sheet of paper on to of the cake to avoid over browning.

Cook in reheated oven at 150 degrees for two hours or until a skewer inserted comes out clean.

I had to rescue my Ozpig from the rain today.  My last cook up on it was just before this rain hit.  I didn’t get to close it up and put the cover on.

Kept telling myself it is going to stop soon but nope.

We have had just over five and a half inches in the past week.  That was up to 8.00 this morning and we have had showers just about all day so haven’t checked the gauge to see what extra we have had.  My tanks are full and overflowing.

That looks very nice Derek; we might give this one a try as we love fruit cake. We have had over six inches of rain in the last few days; we certainly needed it.

Made another of these yesterday.

Someone asked me why only 3/4 of a cup of Baileys in the recipe so this one has 1 cup of Bailey (all I had left) and 1/4 cup of water to compensate.

Still exceptionally superb

Have had a few different flavoured Baileys over the years but this Apple Pie flavoured one didn’t really do it for me so it’s been taking up room in the fridge since Christmas.

Decided to use it in this fruit cake recipe and it has created an amazing flavour.
