MASSAMAN LAMB SHANKS

Ingredients

Peanut Oil
4 Lamb Shanks
1 Medium Onion halved and sliced
4 Tablespoons Massaman Paste
1 Can Coconut Milk
2 Star Anise
1 Cinnamon Stick
1 Cup Beef Stock
2 Kaffir Lime Leaves finely sliced (From my garden)
1 Tablespoon Palm Sugar
1/2 Tablespoon Fish Sauce
3 Potatoes peeled and chopped into bit size pieces

Method
Brown shanks in a couple of teaspoons peanut oil then set aside. Add onions to the camp oven and cook until soft.

Add a third of the coconut milk to the onions and the Massaman paste.  Stir to combine and cook until fragrant then add the rest of the coconut milk, cinnamon stick, star anise and the beef stock and stir to well combine.

Return the shanks, bring to a low simmer and cook for two and a half hours.

Stir in diced potato, palm sugar, kaffir lime and fish sauce and bring to a simmer and cook for another half an hour.

Serve with steamed rice.

Keens Curried Sausages
Ingredients
Cooking Oil
500g Sausages
1 Onion Diced
1 Potato Diced
1 cup frozen pees
2 tbsp Cream
Keens Curried Sausages Recipe Base
Method
Heat a bit of oil in the camp oven, and add the sausages and cook until about half cooked.
Remove the sausages and put aside. Add the onions to the camp oven and cook until caramelized.
Add the recipe base and add I cup of water, and mix well.
Slice the sausages into bite sizes and add to the mix along with the potatoes and pees. Cover and simmer until potato is soft.
Add the cream and let simmer for around 5 minutes.

I served with mashed potatoes. (and a cold beer Smiley)

Curried Sausages

Ingredients
Sausages
Chopped veg (carrots, zucchini, onion, celery)
Snow peas
Ground coriander root
Ground cumin seeds
Garam masala
Ground ginger
Curry powder
Chicken stock
Coconut milk

Method
Mix spices into a small dish - 2 teaspoons of curry and a teaspoon each of everything else. Fry sausages quickly to brown, remove and replace with chopped vegies. Cook for a bit and add the spice mix. Cook until fragrant.
Chop the sausages into bite sized pieces and add to vegetable mix along with a cup of chicken stock. Simmer gently for as long as possible.
Add the snow peas and coconut milk, simmer for 5 minutes until thickened and serve with rice

Beef Curry
Ingredient
1 tbsp oil
500g beef,cubed
onion,sliced
2tbsp curry power
500g can diced tomato
carrot sliced
potato diced

Directions
Heat oil in a large saucepan over medium heat and cook beef and onion for 5 minutes or until browned well. Add Curry Powder and cook stirring for 1 minute, add potatoes and stir well to coat.
Stir in chopped tomatoes and remaining tomato liquid, reduce heat and simmer for 30 minutes or until potato is tender.
Serve with rice.

Curry Rubbed Roast Lamb Sandwich

Ingredients
Lamb roast
Onions
Turkish bread
Gravy mix
Curry powder
Tumeric
Ground cumin
Cayenne pepper
Garam Masala
Ground coriander seeds
Mustard powder
Ground ginger
Salt flakes

Method
Mix all the spices together (approx 2 tablespoons curry and a teaspoon each of the rest). Lightly oil a lamb roast and apply the rub all over. Place in a camp oven and cook until internal temp is about 65-70°C.
In a small camp oven on a stove, start browning off some sliced onions. Mix in some gravy powder and ad water and stir until a nice thick consistency is achieved. Slice the roast and place on the Turkish bread, and top with the onion gravy
