Creamy Mushroom and Onion Chicken (Read 1138 times)

This was tonights dinner.  Very tasty indeed with the original recipe courtesy of taste.com

Ingredients
4 large chicken thighs, skin off, bone in and trimmed of fat
1/2 cup plain flour
2 tablespoons butter
2 tablespoons oil
2 medium onions sliced
4 large mushrooms sliced
Cream
Salt & Pepper
Thyme

Method
Dredge the thighs in flour and fry off in a skillet in the butter and oil until nice and golden.  Remove to the camp oven.

Add onions and mushrooms to skillet and fry off until onions are soft.  Pour in the cream and heat through.  Season with salt and pepper to your taste.

Pour onion/mushroom mix over chicken in the camp oven.  Sprinkle with thyme and bake for around 45 to 50 minutes.  You need the chicken to be well cooked through.

You could serve this with your choice of vegetables or even just rice.

That was also the first time use of the cast iron skillet that was part of the set I bought from Aldi.  I did give it a good seasoning when we got home from Melbourne last time.

It went well with nothing sticking.

That is good to hear. It is always good to try something you buy and have not used and when you do it works well. I have a couple of them but use a frying pan

I am revisiting some of our favourite recipes and cooking them in the Weber ready for when we travel as the Weber is getting to be my regular cooking device.

The meal looks pretty good. I would not say no for a meal like that
I use a lot of chicken thighs. Mostly crumbed and cooked in the air fryer.
I Buy them from aldi (Bulk)
