This recipe from the 2020 Alstonville Camp Oven Gathering

Ingredients
8 chicken thigh fillets - diced
2 carrots - chopped into chunks
1 leek - sliced
2 sticks celery - chopped
4 potatoes - chopped into large dice
2 cups chicken stock
Thyme
Salt & pepper
2 teaspoons cornflour

Method
Place chicken, stock, carrots, celery, potatoes and leek into camp oven and bring to a simmer.  Season with salt and pepper to taste then sprinkle over thyme to taste.

Cook for an hour. 

Mix cornflour with 2 tablespoons of cold water to a paste then stir into stew to slightly thicken.
