Prawn and Noodle Tom Yum Soup.
Ingredients
750g large green prawns
2 tbs fish sauce
1 packet of rice noodles
2 chillies (I used some chilli flakes as I only had a green chilli)
Ľ cup coriander
2 cm piece ginger
150g button mushrooms
2 truss tomatoes
4 shallots
1/3 cup lime juice
6 kaffir lime leaves
2 garlic cloves
2 tsp caster sugar
2 tbs vegetable oil
Method
Peel and devein prawns, reserving shells. Pound chilli, garlic to a paste in a mortar and pestle. (I just chopped it into a paste)

Heat oil in a large saucepan over medium heat. Add prawn shells and chilli paste, and cook for 2 minutes or until shells turn pink and paste is aromatic.

Add 8 cups water, increase heat to high and bring to the boil. Reduce heat to medium low and simmer for 10 minutes. Skim scum from surface.

Strain into a clean saucepan, discarding solids. Bring stock to a simmer over medium heat. Add ginger, lime leaves and shallot. Stir in 1/4 cup lime juice, 1 ˝ tbs fish sauce and 1 1/2 tsp sugar. Simmer gently for 15 minutes to allow flavours to develop.

Add mushroom, tomato and coriander to stock and simmer for 2 minutes. Add noodles and prawns and cook for 2-3 minutes or until prawns change colour. Season to taste with remaining lime juice, fish sauce and sugar.

Scatter over extra coriander and serve.
I served with some fresh camp oven bread.

Pork Hock and Lentil Soup

Ingredients

1 bacon hock
1 tablespoon of oil
1 onion finely cut
2 medium carrots, finely diced
2 tablespoons of chopped celery stalk
4 or 5 cloves of garlic, crushed
200g of red lentils, well washed and drained
1/2 teaspoon of grated nutmeg
1/2 teaspoon of ground fennel seed
2 tablespoons of finely chopped fresh parsley
1 tablespoon of finely chopped mint
1 litre chicken, veal or vegetable stock

Method

In a camp oven gently cook the carrot, onion, celeriac or celery, and garlic in one tablespoon of oil for three or four minutes.
Add drained lentils and stir while continuing to cook for 30 seconds or so.
Add nutmeg and fennel and stir in.
Stir in the mint and parsley.
Add the hock and stock, put on lid and allow the soup to simmer very slowly for at least 1 1/2 hours.
When hock is cooked, remove from soup, take off skin and fat, and cut into small bite-sized pieces.

Lamb and Barley Soup

Ingredients

Lamb shank meat (cooked and pulled)
Lamb stock
Pearl barley
Celery
Carrots
Onion
Garlic
Canned tomatoes
Herbs (thyme, rosemary, parsley)

Method

Fry veges, garlic and herbs for about 5 minutes. Add stock, tomatoes and barley. Simmer for half an hour, add meat and simmer for another half an hour. Enjoy with fresh crusty bread

BEEF, VEGETABLE & NOODLE SOUP

Ingredients

Beef Stock
1 diced carrot
2 diced celery sticks
1/2 finely sliced leek
1 large diced potato
Handful beef mince
Thyme
Salt & Pepper
Egg Noodles

Method
Place vegetables and meat in the camp oven.  Add equal quantities of stock and water to get the amount you need.  Sprinkle in some thyme then season with salt and pepper to your taste.

Bring to the boil and simmer for as long as you can.  At a minimum two hours.

Add noodles and cook until tender then serve with crusty bread.

Thai-style Pumpkin Soup


Ingredients


1 tbs peanut oil
1 brown onion, chopped
1 whole butternut pumpkin, seeded, peeled, chopped
2 carrots, peeled, chopped
2 tbs yellow curry paste
4 cups (1L) chicken stock or vegetable stock
270ml can coconut milk
1 tbs lime juice
1 tbs fish sauce
1 tbs brown sugar

Method


STEP 1
Heat the oil in camp oven over medium heat. Add the onion and cook, stirring, for 5 mins or until onion softens. Add pumpkin, carrot and curry paste and cook, stirring, for 2 mins or until aromatic. Add stock and increase heat to high. Bring to the boil. Reduce heat to medium-low. Cook, partially covered, for 30 mins or until pumpkin and carrot are tender. Set aside to cool slightly.

STEP 2
Use a masher and whisk to carefully blend the pumpkin mixture until smooth. Reserve 1/4 cup (60ml) of the coconut milk. Add the remaining coconut milk to the pumpkin mixture with the lime juice, fish sauce and brown sugar. Stir to combine.

STEP 3
Ladle soup evenly among serving bowls. Drizzle with reserved coconut milk. Serve with fresh camp oven baked bread.
