Why on earth does everyone call it bread when it is obviously a loaf.   Grin Grin

Used this recipe a few times and thought it was already on here but could not find it.

Ingredients
1 3/4 cups self-raising flour
1/4 cup plain flour
1 tsp ground cinnamon
2/3 cup, firmly packed brown sugar
2 overripe medium bananas, mashed. Extra banana for decoration
2 eggs, lightly whisked
1/2 cup milk
50g butter, melted, cooled

Method
Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre.

Mash bananas in a medium bowl, add the eggs, milk, and melted butter, and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined.

Spoon the mixture into a greased and lined loaf tin and smooth the surface.

Lay a couple of thin slices of banana on top for decoration.

Cook in medium oven (180 degrees for 45 to 50 minutes.

The cake is very light and has a nice crumb.  Enjoy!!!!

Late last night Lesley reminded me we also would make banana muffins lots of times. They would be a meal on their own.

Noticed a couple of bananas in the fruit bowl this morning that were getting a bit overripe so voila, turned them into a cake.   Smiley

Morning Derek made another banana loaf yesterday, nice and soft excellent taste but how do you stop the split along the loaf.

Would a bigger tin help? Cheers Robert

I recall a conversation with an elderly CWA lady once who told me that if a cake rises too quickly and splits it is because the oven is too hot.

Not sure if that is true in all cases or not but it s something that has never really concerned me.

I think just about all my banana bread has split actually.
